Chef Aris Tuazon\u2019s (founder) travels in Spain gave light to the concept of a fusion joint that incorporates elements of Spanish cuisine that have not reached Filipino food, along with elements that already have. Classic Filipino dishes like chicken valenciana can be traced back to Spanish dishes like paella, and the heavy use of particular ingredients still reveal commonalities, inspiring Chef Tuazon to study such parallels and curate a unique mix of dishes.<sup data-fn=\"342d2d29-5282-4048-95e2-e5f1f40e7bd4\" class=\"fn\"><a href=\"#342d2d29-5282-4048-95e2-e5f1f40e7bd4\" id=\"342d2d29-5282-4048-95e2-e5f1f40e7bd4-link\">1<\/a><\/sup><\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/eportfolios.macaulay.cuny.edu\/nyfoodatlas\/files\/2025\/05\/729DAD9E-F726-4BE4-89D1-B85304C347A7_1_201_a-851x1024.jpg\" alt=\"\" class=\"wp-image-902\"\/><figcaption class=\"wp-element-caption\">Beyond the bar, guests are welcomed into a warmly lit atmosphere for evening dining. Photo: Alexa Jacinto<\/figcaption><\/figure>\n\n\n\n<p>One can get a glimpse of the Spanish dining experience, like the sharing of tapas, where a variety of appetizers can be ordered, and spoons and forks across the table can all go digging in at once.
